Roasted cocoa cookies recipe

Baked cocoa powder gives these cookies their dark richness. Make a couple of batches and stack them together to make this unashamedly indulgent fridge cake

60g unsalted butter
100g dark chocolate
(70%)
225g dark muscovado sugar
2 tsp vanilla extract
1 medium egg
125g plain flour
½ tsp bicarbonate of soda
